Job Description

Food Technologist II

The Food Technologist will have the following responsibilities:

  • Support sales initiatives to drive revenue. Formulate and prepare benchtop / pilot samples per customers’ project briefs, specified restrictions, and within time allotments
  • Develop predictive analytical testing methods to ensure successful new product transitions to manufacturing
  • Lead new product trials with support from Quality, Engineering, and Operations
  • Leverage problem solving and critical thinking skills to overcome development obstacles, find solutions, and resolve issues with commercialization
  • Perform physical and chemical testing of customer prototypes including, moisture, water activity, pH, viscosity, and microscopy
  • Develop specifications for prototype samples
  • Conduct storage studies to validate new product shelf life
  • Maintain internal documentation and records per internal requirements
  • Source new ingredients / flavors / etc. as needed. Evaluate performance, record results, and approve raw material documentation

Job Requirements


  • Bachelor’s Degree or higher in Food Science or similar
  • Ability to work with SEAFOOD to demonstrate tempuras and batters
  • Responsible for the preparation of customer samples from bench to shipping
  • Preparation and cooking-off of variety of fried foods
  • Maintain lab inventory of all necessary ingredients and ingredient samples including customer retains
  • Conduct storage studies and final written reports
  • Maintain clean, orderly, and sanitary conditions in the R&D lab
    • Experience in breading’s, batters and tempura mixes
    • Proactively, persistency, attention to detail, strong record keeping skills, and flexibility are a must
    • Strong communication skills and the ability to work in a team environment
    • Good math skills are essential. Must have strong problem-solving capabilities
    • Proficient in Excel and Word. Knowledge of SAP and Genesis Nutrition software programs are a strong positive
    • Experience with working with customers directly
    • Strong record keeping skill with attention to detail
    • Certified Food Scientist Certification a plus
    • Training in sensory a plus
    • This position will be working with seafood on a regular basis
  • Ability to self-manage projects including excellent organizational and time management skills
  • Strong communication skills and the ability to work effectively with all levels of the company
  • Adaptability, creativity, and teamwork
  • Must be able to translate product feedback into optimized solutions
